I have just bought the UHD5000 and I'm what is the best spin speed for the internal hard drive ?  I'm stuck with noise versus performance, what does everyone else use ?

Slow drives are quieter so a budget option is any 5400 RPM drive.

Or for total silence use an SSD.

You'll find 2.5" drives are always very quiet, so another option is one of those in a caddy.
